Why I’m Choosing the Take Out Model for Now
In light of so many inquiries for dine in opening (which is really flattering, thank you) I would like to point to a few reasons why I don’t think it is appropriate yet to do so.
With the Covid-19 surge in our state, restaurants are opening and closing with employees testing positive for the disease. There are no actual guide lines we can all follow. It has become a political dispute between the scientific experts and some governmental officials which leaves us in limbo.
Fine dining is a different animal which requires the atmosphere, service and food to work hand in hand so the outcome is “that pleasurable experience.” That means intimate atmosphere with close quarter service which increases the chances of infection of both guests and staff. Furthermore we are supposed to have bare tables and disposable utensils which does not exactly provide a memorable atmosphere.
And now with businesses being pitted against customers to ensure wearing masks (the burden is on businesses to enforce the code or getting fined $500 per occurrence) it seems more and more like the wild west.
So What is the Solution?
IMHO, it seems the best and safest solution for all of us is the take out model for now.
