Chef Gorji, chef/owner of Dallas’ Canary by Gorji reports that his cooking techniques class sold out within a couple days of opening enrollment. He offers the in-demand classes approximately once a quarter. Specializing in his signature New Mediterranean cuisine, steak and seafood, the two time Texas Steak winner will be revealing the secrets of his championship steak as well as the grilled and chilled Avocado /Chili appetizer and Salmon Arugula salad on the menu that night.

Gorji’s Unique Cuisine Called “Mediterranean With Texas Twists”

His use of local ingredients and unusual combinations such as pomegranates with steaks has lead some critics to coin the term “Mediterranean With Texas Twists” for his cuisine. Following the class, the participants will enjoy a three course dinner of the dishes that were featured.

First Course:

Grilled and Chilled Avocado with Texas Chili and Yogurt

Second Course:

Smoked Salmon and Arugula Salad with Diced Egg, Compari Tomatoes, Red Onion and Lime Vinaigrette

Third Course:

Prime Petite Beef Tenderloin with Gnocchi Gorgonzola and Grilled Vegetables

Dinner is accompanied by big Pinot Noirs from Oregon and the Russian River Valley in California. Michael Merriman, Merriman Vineyards and Shasha Beard, certified sommelier with Pioneer Wines, will be available for questions and discussion.
