Chef Gorji, chef/owner of Dallas’ Canary by Gorji reports that his cooking techniques class sold out within a couple days of opening enrollment. He offers the in-demand classes approximately once a quarter. Specializing in his signature New Mediterranean cuisine, steak and seafood, the two time Texas Steak winner will be revealing the secrets of his championship steak as well as the grilled and chilled Avocado /Chili appetizer and Salmon Arugula salad on the menu that night.
“ I hope I can demonstrate the power of simplicity and restraint from adding too many ingredients that makes balancing a dish difficult. These, I believe are some of the biggest “secrets” when cooking.” says Gorji.
The star ingredient of the cooking class and dinner, the prime beef tenderloin, was recently praised in a Dallas Observer review as “one of the best in the metroplex.” They continued on to say that Chef Gorji is “some kind of a meat genius… we sampled Gorji’s mussels, scallops, duck, beef, boar, lamb and quail, and every single one was cooked flawlessly, with total understanding of each cut’s identity.”

His use of local ingredients and unusual combinations such as pomegranates with steaks has lead some critics to coin the term “Mediterranean With Texas Twists” for his cuisine. Following the class, the participants will enjoy a three course dinner of the dishes that were featured.
