Cooking from childhood included shopping for the ingredients that I still do every day. If one doesn’t feel, smell and touch the ingredients, cooking them and bringing them together in one dish is kind of next to impossible.

Canary By Gorji joins a national dining trend
Gorji said he had been thinking about the concept for more than a year. ...No-tipping by fine dining restaurants in New York and San Francisco over the last several months helped guide him.
Chef Gorji wanted to eliminate tipping from his restaurant Canary by Gorji long before it became a national, buzzy topic.

Canary by Gorji is a small 8-table, Mediterranean-inspired restaurant. Chef Gorji does everything from shopping for ingredients to answering the phone.

Chef Gorji won back-to-back statewide Texas Steak Cook-Offs a decade ago, and although he has retired from cook-offs, the judges could wander into his restaurant tomorrow and hand him another medal.
