The unique cuisine that he serves nightly in his Dallas restaurant is detailed in Zing! By Gorji, his Cookbook. Often going against the grain of traditional culinary practice, his creative take on cooking philosophies mixes science and old world hot and cold theories to create his unique recipes.

Gorji, an engineer-turned-chef has lived on three continents, and has just celebrated 30 years calling Texas home, fourteen of those as chef-owner of Canary By Gorji. In the evenings Tuesday through Saturday, the back-to-back Texas Steak Champion can be found in his kitchen cooking for his guests at Canary By Gorji.
Early each day, Gorji heads out, stopping at farmers markets and local specialty stores selecting ingredients for that evening’s menu.
His gregarious nature and front-of-the house bonhomie are well-known. The Renzell restaurant rating system rates Canary By Gorji number one in hospitality among Dallas restaurants.
His sauce line Gorji Gourmet has won first place awards in their divisions and his cookbook Zing! has won domestic and international independent publisher competitions.

We are very small with only 7 tables. We believe dining should be pleasurable and relaxed, so we do not rush you through your dinner to "turn the table" to seat more people, we do not have televisions and unfortunately cannot accommodate young children. We thank you for your understanding of these matters and hope you enjoy your time with us when dining in Dallas.
