Gorji, an engineer-turned-chef has lived on three continents, and has just celebrated 30 years calling Texas home, fourteen of those as chef-owner of Canary By Gorji. Tuesday through Saturday, the back-to-back Texas Steak Champion cooks his signature New Mediterranean cuisine, prime steaks and seafood at his restaurant in Addison/Dallas, TX.

Early each day, Gorji heads out, stopping at farmers markets and local specialty stores selecting ingredients for that evening’s menu.

Guests often report that they see him popping outside to pluck fresh herbs, growing in pots just outside his restaurant door, to finish off their meals before they are served.
